Preheat the oven to 425°F. For the crust: In a medium bowl, combine 1 cup plus 2 tablespoons flour, 1 1/2 teaspoons sugar, and 1/8 teaspoon salt.

Turn the dough out onto a lightly floured surface and form it into a ball. Wrap in plastic wrap, flatten into a 6-inch disk, and refrigerate for at least 30 minutes.

On a lightly floured surface, roll out the dough into a large round, about 1/8 to 1/4 inch thick. Trim to a 15-inch circle.

Dust the dough lightly with flour and fold it into quarters. Place it, with the point in the center, into a 9 1/2 or 10-inch tart pan with a removable bottom.
