  3. Cut the cold butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse meal with pea-sized crumbs.
  4. Add 2/3 cup of jellied cranberry sauce to the bowl.
  5. Mix until a cohesive dough forms. If the dough is too dry, add a little more cranberry sauce, one teaspoon at a time, until it holds together when pressed.
  6. Divide the dough into two equal portions and flatten each into a disk. Wrap in plastic and chill for 15 minutes if the dough feels too soft to handle.
  7. On a lightly floured surface, roll out one portion of the dough to about 1/8-inch thickness.
  8. Use a 2-inch round cookie cutter or a small glass to cut out circles.
  9. Transfer the circles to a parchment-lined baking sheet.
  10. Prick each circle 2 or 3 times with a fork to prevent puffing.
  11. Bake for 10 minutes.
  12. Lightly beat one egg white and brush a thin layer over the tops of the crackers.
