Ingredients

Directions

  1. Preheat oven to 375ðF (191ðC). Coat a 15x10-inch jelly roll pan with nonstick cooking spray.
  2. In a large bowl, combine 1 1/4 cups flour, baking powder, baking soda, 1 1/3 cups sugar, and 1/2 cup cocoa powder.
  3. Add 1 cup water, 1/4 cup margarine, and 1 1/2 tsp vanilla extract to the dry ingredients.
  4. Beat at low speed for 1 minute, then increase to high speed and beat for 3 minutes until smooth.
  5. In a separate bowl, beat 5 egg whites at high speed until stiff peaks form.
  6. Stir 1 cup of the beaten egg whites into the chocolate batter to loosen it.
  7. Gently fold in the remaining egg whites until no white streaks remain.
  8. Spoon the batter into the prepared pan and bake for 20 minutes. Cool completely.
  9. Reduce oven temperature to 350ðF (177ðC).
  10. In a baking dish, combine 12 oz fresh cranberries, the remaining 2/3 cup sugar, 1/2 tsp cinnamon, and 3 tbsp rum.
  11. Bake the cranberry mixture for 10 minutes, stirring occasionally. Cool completely.
  12. While cranberries cool, spread 16 oz low-fat vanilla yogurt onto heavy-duty paper towels to drain excess liquid for 5 minutes.
  13. Scrape the drained yogurt into a bowl and stir in 1 cup softened vanilla ice milk until smooth.
  14. Cut the cooled chocolate base into 16 squares.
  15. Spoon 2 tablespoons of the yogurt mixture onto each of 16 dessert plates.
  16. Place a chocolate square on top of the yogurt.
  17. Melt 1 oz unsweetened chocolate and drizzle over the yogurt and brownie in small circles.
  18. Spoon the cooled cranberry compote evenly over the brownies.
  19. Garnish with mint sprigs if desired and serve immediately.
