  1. Preheat oven to 350&# 194;°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, 3 tablespoons sugar, and melted butter until the mixture resembles wet sand.
  3. Press the crumb mixture firmly and evenly onto the bottom of an 8 or 9-inch springform pan.
  4. Bake the crust for 10 minutes, then remove from oven and allow to cool completely.
  5. While the crust cools, drain the frozen raspberries, reserving the juice. Set the drained berries aside for garnish or filling.
  6. In a small saucepan, combine the reserved raspberry juice, cold water, and gelatin.
  7. Let the mixture stand for 5 minutes to allow the gelatin to bloom.
  8. Cook over low heat, stirring constantly, until the gelatin is fully dissolved and the liquid is clear.
  9. Remove from heat and let cool for 10 minutes until slightly thickened but still pourable.
  10. In a large mixing bowl, beat the softened cream cheese and remaining sugar until smooth and creamy.
  11. Fold in the drained raspberries and the cooled gelatin mixture, mixing on low speed until just combined.
  12. Refrigerate the filling mixture for about 15-20 minutes, checking frequently, until it begins to thicken and holds soft peaks.
  13. In a separate bowl, whip the heavy cream until stiff peaks form.
  14. Gently fold the whipped cream into the raspberry cream cheese mixture in two additions, being careful not to deflate the mixture.
