Creme Brulee With Raspberries recipe image

This elegant twist on the classic French dessert combines the rich, silky texture of vanilla-infused crème brûlée with the bright acidity of fresh raspberries. The custard is baked gently in a double boiler for maximum smoothness, then cooled and set in individual puff pastry shells for a delightful textural contrast between the flaky crust and the creamy filling. The final touch is a layer of sugar torched to a perfect golden caramel, providing that signature crackly crunch. Ideal for romantic dinners or sophisticated gatherings, this dessert feels indulgent yet approachable. The natural sweetness of the berries balances the richness of the heavy cream and egg yolks, making it a memorable finale to any meal.

Ingredients

Directions

  1. Combine 6 egg yolks and 1/2 cup sugar in the top half of a double boiler set over very hot water.
  2. Whisk vigorously (or beat with a hand mixer) until the mixture is pale lemon-colored, thick, and has the consistency of mousse.
  3. Remove the double boiler top from the heat and set aside.
  4. In a heavy saucepan, combine 3 cups heavy cream and the split vanilla bean.
  5. Heat over medium heat until it just begins to boil, then immediately remove from heat.
  6. Strain the hot cream mixture through a fine sieve to remove the vanilla bean.
  7. Slowly pour the hot cream into the egg yolk mixture, whisking rapidly and constantly to temper the eggs.
  8. Return the double boiler top to the hot water bath.
  9. Cook, stirring constantly, for about 10 minutes or until the mixture thickens significantly.
  10. Remove the double boiler top and place it into a bowl of ice water to stop the cooking process.
  11. Stir occasionally while the mixture cools completely until it reaches the consistency of a very thick custard.
  12. Spread a single layer of fresh raspberries over the bottom of each of the 6 baked puff pastry shells.
  13. Pour the cooled crème mixture over the raspberries, filling the shells to the top.
  14. Refrigerate for at least 3 hours, or up to 8 hours, to set.
  15. When ready to serve, sprinkle 2 tablespoons of the remaining sugar evenly over the top of each filled shell.
  16. Place the shells about 6 inches away from a broiler flame for about 3 minutes, or until the sugar melts and caramelizes into a hard crust.
  17. Watch carefully to avoid overcooking, which will melt the custard underneath.
  18. Immediately remove from the heat source.
  19. Drizzle Raspberry Coulis (if desired) over the bottom of 6 dessert plates.
  20. Place a crème brûlée in the center of each plate and serve immediately while the sugar crust is still crisp.
