This dish transforms simple halibut into a flavorful Creole classic. The firm white fish is cut into bite-sized bits and baked until just tender, then smothered in a rich, savory sauce made from sautéed onions, garlic, green peppers, and crushed tomatoes. The combination of bay leaf, salt, pepper, and a hint of Tabasco creates a deep, aromatic profile that highlights the natural sweetness of the seafood. It’s a comforting yet elegant meal that feels special enough for guests but remains simple enough for a busy weeknight. Serve it hot over rice or with crusty bread to soak up the delicious sauce.

Ingredients

Directions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the halibut into 1-inch cubes and place them in an 8- or 9-inch baking dish that has been lightly greased with margarine or oil.
  3. Cover the dish and bake for 20 minutes, or until the fish flakes easily with a fork.
  4. While the fish is baking, heat 3 tablespoons of cooking oil in a medium saucepan over medium heat.
  5. Add 1/2 cup chopped onion and 1 minced garlic clove; sauté until softened and lightly golden.
  6. Stir in 1/2 cup chopped green pepper and 1 bay leaf, cooking for another minute.
  7. Add the 16 oz can of whole tomatoes (cut into bite-sized pieces), 1 teaspoon salt, and 1/8 teaspoon pepper.
  8. Bring to a simmer, then reduce heat and let it cook uncovered for 20 minutes to thicken the sauce.
  9. Remove the bay leaf and stir in Tabasco sauce if desired for extra heat.
  10. When the fish is done, carefully drain any excess liquid from the baking dish.
  11. Pour the hot Creole sauce evenly over the baked halibut bits.
  12. Serve immediately while hot.
