Ingredients

Directions

  1. Trim excess fat from the pork butt or shoulder and cut the meat into 2-inch chunks.
  2. In a large 4-5 quart pot, combine the pork chunks, minced garlic, anise seed, ground cinnamon, ground cloves, soy sauce, and 1 quart of water.
  3. Place the pot over high heat and bring the mixture to a rolling boil.
  4. Once boiling, cover the pot, reduce heat to low, and simmer until the meat is very tender when pierced with a fork, approximately 1.5 hours.
  5. Remove the lid and increase the heat to high. Boil the liquid uncovered, stirring often, until the sauce reduces and becomes thick and sizzling, about 30 minutes.
  6. Drain the pork well, discarding the excess fat and liquid.
  7. Using two forks, shred the tender pork into bite-sized pieces.
  8. Spread the shredded pork in an even layer in a 9x13 inch baking dish.
  9. Bake in a preheated 400°F (204°C) oven until the pork begins to crisp and brown on the outside, about 15-20 minutes.
  10. Serve the crispy pork spooned over hot cooked rice, garnished with thinly sliced green onions, fresh cilantro sprigs, and your favorite hoisin or Chinese plum sauce.
