Description

These Crispy Baked Egg Rolls offer a healthier, guilt-free twist on the classic Chinese-American appetizer. Instead of deep-frying, we bake them until the wrappers are shatteringly crisp and golden brown, using just a hint of dark sesame oil for flavor. The filling is a vibrant mix of shredded cabbage, crunchy water chestnuts, earthy shiitake mushrooms, and fresh bamboo shoots, all bound together with soy sauce, rice wine, and a touch of honey. Directions

  1. Preheat the oven to 400°F (200°C). Line two large baking sheets with parchment paper or silicone mats.
  2. Heat 1/4 cup of water in a large wok or skillet over medium-high heat.
  3. Add the diced onions, minced ginger, and minced garlic. Stir-fry for about 5 minutes until the onions are tender but not browned.
  4. Add the diced celery, shiitake mushrooms, button mushrooms, cabbage, bamboo shoots, and water chestnuts to the wok.
  5. Stir-fry the vegetables for 5 to 8 minutes, until they are tender-crisp and the cabbage has wilted slightly.
  6. Remove the wok from heat. Stir in the soy sauce, rice wine, and honey until the vegetables are evenly coated.
  7. Transfer the vegetable mixture to a colander placed over a bowl. Let it drain for at least 10 minutes to remove excess moisture, which ensures crispy rolls.
  8. Prepare your assembly station: place a stack of egg roll skins on a clean surface, keeping them covered with a damp towel to prevent drying out. Have a small bowl of water and a pastry brush ready.
  9. Lay one egg roll skin flat with a corner pointing toward you. Spoon about 1/4 cup of the drained filling into the center.
  10. Fold the bottom corner over the filling, then fold in the left and right sides to create a packet.
  11. Brush the top corner lightly with water. Roll tightly from the bottom up to form a cylinder, sealing the edge with water.
  12. Place the rolls seam-side down on the prepared baking sheets. Repeat with remaining skins and filling.
  13. Lightly brush the tops of the rolls with the warmed dark sesame oil.
  14. Bake for 20 to 25 minutes, flipping halfway through, until the rolls are golden brown and crispy.
  15. Let cool for a few minutes before serving. Serve immediately while hot and crunchy.
