Ingredients

Directions

  1. Wash the basmati rice in several changes of warm water until the water runs clear.
  2. Soak the rice in cold water with 1 tablespoon of salt for 6 to 8 hours, or in lukewarm water for 30 to 45 minutes to save time.
  3. While rice soaks, heat 2 tablespoons of olive oil in a large skillet over medium heat and add the diced onion.
  4. Cook the onion until translucent, about 10 minutes.
  5. Add the lentils, minced garlic, black pepper, and paprika to the skillet; cook for 2 minutes.
  6. Pour in 2 cups of water, cover, and simmer until lentils are tender, about 45 minutes.
  7. Season the lentil mixture with the remaining 1 teaspoon of salt to taste and stir in the julienned basil leaves.
  8. In a large saucepan, bring 2 1/2 quarts of water and the remaining 1 tablespoon of salt to a boil.
  9. Drain the soaked rice and add it to the boiling water.
  10. Cook uncovered for 10 to 12 minutes, stirring occasionally, until rice is tender but still has a slight bite in the center.
  11. Strain the rice in a colander, rinse briefly with warm water, and drain well.
  12. Heat the remaining 2 tablespoons of olive oil in a large, heavy-bottomed stock pot with a tight-fitting lid over medium heat.
  13. Add 2 tablespoons of water to the hot oil, then carefully spread about two-thirds of the cooked rice evenly onto the bottom of the pot.
  14. Spread the cooked lentil mixture evenly over the layer of rice.
  15. Cover the lentils with the remaining rice, mounding it slightly in the center.
  16. Use the handle of a wooden spoon to poke 5 deep holes through the rice to the bottom to allow steam to escape.
  17. Cover the pot, reduce heat to low, and cook for 20 to 25 minutes to form a crispy bottom crust.
  18. Remove from heat and let stand for 5 minutes before serving.
