Cup Cheese recipe image

Cup Cheese is a luxurious, old-fashioned delicacy that transforms simple curds into a silky, spreadable treat. This recipe relies on the gentle fermentation of thick milk to create a base of tender curds, which are then enriched with butter, cream, and eggs. The result is a dish with a velvety mouthfeel and a subtle tanginess balanced by the richness of dairy. It’s perfect for special breakfasts, brunches, or as a unique addition to a cheese board. While it requires a week of daily attention to build the curd, the final simmering step brings it all together into a cohesive, elegant bite that tastes like pure comfort food.

Description

Cup Cheese is a luxurious, old-fashioned delicacy that transforms simple curds into a silky, spreadable treat. This recipe relies on the gentle fermentation of thick milk to create a base of tender curds, which are then enriched with butter, cream, and eggs. The result is a dish with a velvety mouthfeel and a subtle tanginess balanced by the richness of dairy. It&# 226;ÂÂs perfect for special breakfasts, brunches, or as a unique addition to a cheese board. While it requires a week of daily attention to build the curd, the final simmering step brings it all together into a cohesive, elegant bite that tastes like pure comfort food.

Ingredients

Directions

  1. Scald the thick milk by heating it at 350ðF (177ðC) for a few minutes until the curds form.
  2. Drain the liquid from the curds and place the solids in an earthen vessel.
  3. Keep the vessel at a moderate temperature of about 75ðF.
  4. Each day for one week, add fresh baked curds to the vessel to build the batch.
  5. After one week, transfer the accumulated curds into a heated pan.
  6. Simmer the curds very slowly, bringing them to a gentle boil without stirring.
  7. Add a pinch of salt and 1/2 pound of butter to the pan.
  8. Dissolve 1 teaspoon of baking soda in 1 cup of fresh sweet cream and stir into the mixture.
  9. Continue to boil the mixture gently for 15 minutes while stirring occasionally.
  10. Beat 2 or 3 eggs and stir them into the hot cheese mixture.
  11. Pour the final mixture into small cheese cups to set and serve.
