Ingredients

Directions

  1. Clean the broccoli and cut it into small florets and pieces.
  2. Cover the broccoli with boiling water containing 1 teaspoon of salt.
  3. Boil for about 15 minutes, or until the broccoli is very tender.
  4. Drain the broccoli well, then mash it thoroughly.
  5. Add the mashed broccoli to 3 3/4 cups of chicken stock in a heavy saucepan.
  6. Heat butter or oil in a separate skillet and sauté the finely chopped onion until lightly browned.
  7. Add the sautéed onion to the broccoli and stock mixture.
  8. In the same skillet, fry the curry powder and cayenne pepper in remaining butter until dark brown and fragrant.
  9. Stir in the cornstarch and cook for a minute to form a smooth paste.
  10. Gradually add a little hot stock from the saucepan to the curry paste, blending well to dissolve lumps.
  11. Return the curry mixture to the saucepan and stir well.
  12. Simmer gently for 5 minutes, stirring occasionally.
  13. Press the soup through a sieve or puree in a blender until completely smooth.
  14. Season with more salt to taste if needed.
  15. Chill the soup thoroughly in the refrigerator.
  16. Just before serving, stir in the chilled whipping cream.
  17. Garnish with finely chopped fresh watercress.
