  1. Preheat oven to 375 degrees F (191&# 194;°C). Wrap 2 whole chicken breasts in buttered aluminum foil and bake for 45 minutes until cooked through.
  2. Remove chicken from oven, unwrap, and let cool completely.
  3. Cut the cooled chicken meat into small cubes and set aside.
  4. In a medium saucepan, melt 2 tablespoons butter over medium heat. Add 1 tablespoon minced onion and cook for 1 minute.
  5. Stir in 2 1/2 tablespoons flour and curry powder. Cook over low heat for 2 minutes, stirring constantly, until the mixture is thick and smooth.
  6. Season with 1/2 teaspoon salt and stir in 1 cup light cream.
  7. Stir in the cubed chicken and 1/2 cup chopped walnuts. Remove from heat and let the filling cool completely.
  8. To assemble, place one sheet of thawed phyllo dough on a flat work surface. Cover remaining dough with a damp towel and plastic wrap to prevent drying.
  9. Brush the phyllo sheet with melted butter, then top with two more sheets, brushing each with melted butter.
  10. Cut the stacked phyllo sheets in half lengthwise, then cut each half crosswise into six equal strips.
  11. Spoon a heaping teaspoon of the chicken filling onto the wide end of each strip.
  12. Form a triangle by folding the right-hand corner over to the opposite side. Continue folding the triangle down the length of the strip.
  13. Repeat the process until all filling is used. Place triangles on a greased baking sheet and brush lightly with melted butter.
  14. Bake at 400 degrees F (204°C) for about 10 minutes, or until golden brown and puffed.
