Curried Garbanzo Beans
Description
This Curried Garbanzo Beans recipe transforms humble chickpeas into a rich, aromatic Indian-style curry. The dish begins with soaking and boiling the beans until tender, infused with whole spices like cardamom, cloves, and cinnamon. A separate tempering of fried onions, garlic, and ginger creates a deep flavor base, which is then combined with tomatoes for a savory sauce. The addition of dried pomegranate seeds and mango powder (amchur) introduces a delightful tanginess that balances the earthiness of the beans. Finished with a drizzle of sizzling ghee, this dish offers a comforting texture and complex flavor profile. It is an excellent vegan main course, perfect served with rice, roti, or naan for a hearty weeknight dinner or a festive family meal.Ingredients
Directions
-
Rinse the garbanzo beans thoroughly and soak them in plenty of water overnight.
-
Drain the soaked beans and place them in a pot with fresh water, salt, one finely chopped onion, 4 cloves of crushed garlic, 4 large cardamom pods, 1 inch of sliced ginger, and 6 cloves.
-
Bring to a boil, then reduce heat and simmer for about an hour until the beans are tender, or pressure cook for 7 whistles.
-
While the beans cook, heat oil in a separate pan or wok over medium heat.
-
Add thinly sliced remaining onions and fry until they turn golden brown and soft.
-
Add any remaining garlic cloves and continue frying until the mixture browns and dries out slightly.
-
Add finely chopped tomatoes and cook for 4 to 5 minutes until they break down into a thick paste.
-
Drain the cooked beans and add them to the onion-tomato mixture; stir well to coat.
-
Sprinkle in mango powder (amchur), dried pomegranate seeds, and grated ginger.
-
Pour in a little reserved bean cooking liquid if needed, cover, and simmer on low heat for 15 to 20 minutes to allow flavors to meld.
-
Just before serving, drizzle sizzling ghee or oil over the beans and garnish with green chili if desired.
