Description

This comforting Dal Kofta Curry features soft, steamed balls made from spiced toor dal, nestled in a luscious buttermilk gravy. The dish balances the earthy warmth of roasted channa dal and cumin with the bright acidity of yogurt and the heat of fresh green chilies. A fragrant tempering of mustard seeds and curry leaves adds the final aromatic touch. It’s a vegetarian delight that is both nourishing and deeply flavorful, perfect for a cozy dinner or a special lunch. The texture contrast between the firm dumplings and the silky sauce makes every bite satisfying. Serve hot with steamed rice or warm roti for a complete meal that warms the soul.

Ingredients

Directions

  1. Wash the toor dal thoroughly and soak it in water for at least 2-3 hours to soften.
  2. Drain the soaked dal completely. In a blender or food processor, combine the dal with the onion, half-inch ginger piece, garlic cloves, and whole green chilies.
  3. Add a small amount of water to help blend, but keep the mixture thick. Blend until you achieve a coarse paste. Do not make it too watery.
  4. Transfer the paste to a mixing bowl. Add salt and chopped cilantro leaves if using. Mix well to combine.
  5. Wet your hands to prevent sticking and form the mixture into small, uniform balls (koftas).
  6. Place the koftas in a steamer basket. Steam them for about 20 minutes until firm and cooked through. Remove and let them cool slightly; they will firm up as they cool.
  7. In a separate pan, gently heat the buttermilk or yogurt over medium-low heat. Stir continuously to prevent curdling.
  8. In a small grinder or mortar, grind together the ground coriander, cumin, roasted channa dal, fenugreek, turmeric, and ground coconut into a fine powder.
  9. Add this spice powder to the heated buttermilk. Stir well to incorporate. Add the grated ginger and finely chopped green chilies.
  10. Season with salt to taste. Simmer gently for a few minutes, stirring occasionally, until the sauce thickens slightly and becomes fragrant.
  11. Carefully slide the steamed koftas into the simmering buttermilk sauce. Let them simmer together for 5 minutes to absorb the flavors.
  12. In a small frying pan, heat the oil over medium heat. Add the mustard seeds and cook until they stop popping.
  13. Add the curry leaves to the hot oil and fry for a few seconds until fragrant.
  14. Pour this tempering (tadka) over the dal kofta curry. Stir gently to combine.
  15. Remove from heat and serve hot with rice or roti.

Note

For a richer sauce, you can substitute half of the buttermilk with thick yogurt.

If you don't have a steamer, you can place the koftas on a plate covered with foil and place it in a pot with boiling water, covering the pot to steam.

Roasting the channa dal before grinding enhances the nutty flavor of the sauce significantly.

Be careful not to boil the buttermilk sauce vigorously, as it may split. Keep the heat low to medium.

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stove.
