Description

This sophisticated dessert features a dense, intensely flavored dark chocolate terrine that melts in your mouth. The base is a luxurious mousse made with bittersweet chocolate, heavy cream, and a hint of dark rum for depth. It is accompanied by two complementary sauces: a smoother milk chocolate sauce and a richer, more intense dark chocolate glaze. The terrine is frozen to set, offering a firm yet creamy texture that contrasts beautifully with the warm, fluid sauces. Perfect for special occasions, dinner parties, or as a decadent treat for chocolate lovers. The combination of textures and chocolate varieties creates a complex, indulgent experience that feels truly restaurant-quality.

Ingredients

Directions

  1. Grease the bottom and sides of a 9 1/4-by-5 1/4-by-2 3/4-inch metal loaf pan with vegetable oil.
  2. Line the pan with plastic wrap, ensuring it extends about 1 inch beyond the rim on all sides.
  3. Place 18 ounces of bittersweet chocolate in a food processor fitted with the metal chopping blade.
  4. Process the chocolate for 30 to 45 seconds until it is finely chopped.
  5. In a small saucepan, combine 1 cup milk, 2 tablespoons granulated sugar, and a dash of salt.
  6. Cook over medium heat, stirring with a wooden spoon, until the sugar dissolves and the mixture comes to a gentle boil.
  7. With the food processor running, slowly pour the hot milk mixture through the feed tube into the chopped chocolate.
  8. Process for 15 to 25 seconds until the chocolate is completely melted and smooth.
  9. Scrape down the sides of the work bowl with a spatula.
  10. Add 2 tablespoons vegetable oil, 2 tablespoons dark rum, and 1 tablespoon vanilla extract.
  11. Process for another 15 to 25 seconds until the mixture is smooth and creamy.
  12. Scrape the chocolate mixture into a large bowl and let it stand until tepid.
  13. In the chilled bowl of a heavy-duty electric mixer fitted with the wire whip attachment, whip 1 1/2 cups heavy cream at medium-high speed.
  14. Whip until soft mounds barely start to form and the cream is still pourable; do not overwhip.
  15. Using a large rubber spatula, gently fold one-third of the whipped cream into the tepid chocolate mixture to lighten it.
  16. Fold in the remaining whipped cream gently, being careful not to overfold or the mousse will become grainy.
  17. Scrape the chocolate mousse into the prepared loaf pan and smooth the top with the rubber spatula.
  18. Wrap the loaf pan tightly in plastic wrap and then in aluminum foil.
  19. Freeze the terrine for at least 6 hours or overnight until firm.
  20. To make the Milk Chocolate Sauce: Finely chop 6 oz milk chocolate.
  21. Heat 1/2 cup half-and-half in a small saucepan until hot but not boiling.
  22. Pour the hot half-and-half over the chopped milk chocolate and let sit for 1 minute.
  23. Stir in 1 teaspoon vanilla extract until smooth.
  24. To make the Dark Chocolate Glaze: Finely chop 8 oz semisweet chocolate.
  25. Heat 3/4 cup plus 2 tablespoons heavy cream in a saucepan until simmering.
  26. Pour the hot cream over the chopped semisweet chocolate.
  27. Add 2 tablespoons light corn syrup and 2 teaspoons vanilla extract.
  28. Stir until the chocolate is completely melted and the glaze is smooth.
  29. Let both sauces cool to room temperature before serving alongside the frozen terrine.
