Ingredients

Directions

  1. Preheat oven to 350ðF (175ðC). Line two 15x10x1-inch jelly-roll pans with parchment paper and grease lightly with butter.
  2. Melt the bittersweet chocolate in a double boiler or microwave until smooth. Set aside to cool slightly.
  3. Beat egg yolks and 1/2 cup of the sugar in a large bowl until thick and pale yellow.
  4. Stir the melted chocolate into the yolk mixture until fully combined.
  5. In a separate clean bowl, beat egg whites until soft peaks form. Gradually add remaining 1 1/4 cups sugar and beat until stiff, glossy peaks form.
  6. Gently fold the chocolate mixture into the egg whites in three additions, being careful not to deflate the whites.
  7. Divide batter evenly between the prepared pans. Bake for 20-25 minutes until a toothpick inserted in the center comes out clean.
  8. Cool cakes in pans for 10 minutes, then invert onto wire racks and remove parchment paper. Allow to cool completely.
  9. For the buttercream: Beat 1 1/2 cups softened unsalted butter until creamy. Dissolve 3 tbsp instant espresso in 1 tbsp hot water and let cool.
  10. Gradually beat the cooled espresso mixture and 1 cup sugar into the butter until light and fluffy.
  11. To assemble: Place one cake layer on a serving plate. Spread half the buttercream evenly over the top.
  12. Place the second cake layer on top. Spread the remaining buttercream over the top and sides of the torte.
  13. For the ganache: Heat 1 1/2 cups heavy cream until simmering. Pour over 6 oz chopped bittersweet chocolate. Let sit for 2 minutes, then stir until smooth.
  14. Pour the ganache over the frosted torte, allowing it to drip down the sides. Decorate with chocolate coffee beans or rosettes if desired.
