  1. Devein and peel the shrimp, then chop them very finely into a paste.
  2. Mince the garlic and ginger separately; set aside half of each for the sauce.
  3. Peel the tough strings from the celery stalk and slice it diagonally into 1/4-inch thick pieces.
  4. In a small bowl, combine soy sauce, oyster sauce, vodka, chicken broth, and 1 tablespoon of cornstarch to make the sauce base; reserve.
  5. In a mixing bowl, combine the shrimp paste with the remaining minced ginger, garlic, salt, and the second tablespoon of cornstarch.
  6. Mix the shrimp mixture well and form into 1-inch diameter balls using lightly moistened hands.
  7. Heat oil in a deep pan to 350ðF (175ðC).
  8. Deep-fry the shrimp balls in batches for about 2-3 minutes until golden brown and cooked through.
  9. Remove shrimp balls and drain on paper towels; keep warm.
  10. In a wok, heat 1 tablespoon of the hot frying oil and stir-fry the reserved ginger and garlic until golden.
  11. Add the sliced celery and stir-fry quickly for about 30 seconds until crisp-tender.
  12. Pour in the reserved sauce mixture and stir constantly until it thickens and bubbles.
