Description

This rustic Delicatessen Black Bread captures the soulful essence of traditional European bakeries. Rich with rye flour and whole bran cereal, it offers a deeply satisfying, chewy texture and a complex flavor profile balanced by dark molasses and aromatic caraway seeds. The addition of a hint of unsweetened chocolate deepens the color and adds a subtle earthiness that complements the savory onion powder. Ideal for slicing thick for robust sandwich fillings or serving alongside rich stews and cheeses, this bread improves with age. It is a comforting, wholesome staple that brings warmth and character to any meal, requiring simple ingredients but rewarding patience with a truly artisanal result.

Ingredients

Directions

  1. In a large mixing bowl, combine 1 cup all-purpose flour, 1 cup rye flour, yeast, whole bran cereal, salt, caraway seeds, and onion powder. Mix well to distribute the dry ingredients evenly.
  2. In a saucepan, heat milk, 1/2 cup water, molasses, oil, and the unsweetened chocolate square until very warm (125-130 degrees F). The chocolate does not need to melt completely, just soften and blend.
  3. Pour the warm liquid mixture into the bowl with the dry ingredients.
  4. Using a mixer on low speed, blend until the dough is just moistened. Then, beat for 3 minutes at medium speed to develop the gluten.
  5. By hand, gradually stir in the remaining rye flour and enough of the remaining all-purpose flour to form a firm, manageable dough.
  6. Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
  7. Place the dough in a greased bowl, turning once to coat the top with grease. Cover and let rise in a warm place until doubled in size, about 30-45 minutes.
  8. Punch down the dough to release air bubbles.
  9. Divide the dough into two equal parts. On a lightly floured surface, shape each half into a round loaf.
  10. Place the loaves into greased 8-inch round cake pans. Cover and let rise in a warm place until almost doubled, about 15 minutes.
  11. Preheat oven to 375 degrees F (191C). Bake the loaves for 40-45 minutes.
  12. While the bread is baking, prepare the glaze: Combine 1/4 cup water and 1/2 teaspoon cornstarch in a small saucepan. Heat to a boil, stirring constantly until thickened.
  13. About 5 minutes before the end of the baking time, remove the loaves from the oven and brush the tops generously with the hot cornstarch glaze.
  14. Sprinkle additional caraway seeds on top of the glazed loaves if desired.
  15. Return the loaves to the oven and bake for an additional 5 minutes, or until the glaze is glossy and the loaves sound hollow when tapped on the bottom.
  16. Remove from pans and let cool on a wire rack before slicing.
