Description

These deviled eggs offer a lighter, fresher take on the classic appetizer. By substituting some mayonnaise with strained low-fat yogurt, you achieve a creamy texture with a pleasant tang. The addition of sweet pickle relish and Dijon mustard provides a balanced sweet-and-sour kick that cuts through the richness of the egg yolks. Perfect for potlucks, holiday gatherings, or as a quick protein-packed snack, these eggs are simple to assemble and always a crowd-pleaser. They hold up well in the fridge, making them ideal for make-ahead meals. Serve them chilled with a dusting of paprika for a pop of color and subtle smokiness.

Ingredients

Directions

  1. Place the low-fat yogurt on several layers of paper towels and spread it to a 1/2-inch thickness to drain excess liquid.
  2. Cover with additional paper towels and let stand for 5 minutes to thicken.
  3. Scrape the thickened yogurt into a medium bowl using a rubber spatula and set aside.
  4. Peel the hard-cooked eggs and cut them in half lengthwise.
  5. Remove the yolks from the egg whites and place the whites on a serving platter.
  6. Add the egg yolks to the bowl with the strained yogurt.
  7. Mash the yolks into the yogurt with a fork until the mixture is smooth and creamy.
  8. Stir in the fat-free mayonnaise, sweet pickle relish, Dijon mustard, salt, and white pepper until well combined.
  9. Spoon or pipe the yolk mixture into the hollowed-out egg white halves.
  10. Cover the platter and refrigerate for at least 1 hour to allow flavors to meld.
  11. Sprinkle with paprika just before serving, if desired.
