  1. Combine the cubed ham and ham fat in a food processor.
  2. Pulse until the meat is ground fairly fine, similar to a coarse pâté texture.
  3. Add the mustard, vinegar, nutmeg, cloves, pepper sherry, anchovy paste, garlic, black pepper, ginger, and thyme to the processor.
  4. Process again until all ingredients are well combined and the mixture is smooth but still has some texture.
  5. If using a blender instead of a processor, grind the ham and fat in two batches.
  6. Scrape the first batch into a bowl, add the seasonings, process the second batch, and then combine everything in the bowl.
