Description

This hearty pizza dough combines unbleached white flour with cracked wheat for a robust, nutty flavor and excellent texture. By omitting sugar and fat, this recipe offers a lighter, healthier alternative to traditional pizza bases while maintaining structural integrity. The crust develops a beautiful golden-brown color and a satisfying chew when baked on quarry tiles with steam. It is perfect for topping with fresh vegetables like sliced tomatoes and a light dusting of grated cheese. Ideal for weeknight dinners, this recipe allows you to control the ingredients completely, resulting in a wholesome meal that feels indulgent yet guilt-free. The simple ingredient list makes it easy to customize with your favorite toppings.

Ingredients

Directions

  1. Preheat oven to 450&# 194;°F (230ðC). Place unglazed quarry tiles on a rack in the lower third of the oven to heat up.
  2. In a large bowl, combine 3 cups unbleached white flour, 2 cups cracked wheat flour, 1 teaspoon salt, and 2 packages of yeast.
  3. Add 2 cups of water to the dry ingredients and mix until a shaggy dough forms.
  4. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
  5. Divide the dough in half and shape each portion into a large round pizza base.
  6. Place a pan of hot water on the bottom rack of the oven before putting the pizza in to create steam.
  7. Transfer the shaped dough onto the hot quarry tiles using a peel or inverted baking sheet.
  8. Lightly spray the dough with non-stick cooking spray (Pam).
  9. Top with fresh sliced tomatoes and your choice of vegetable toppings.
  10. Sprinkle with a light layer of grated cheese (about 1 tablespoon per pizza for a low-fat option).
  11. Bake for 10-15 minutes, or until the crust is golden brown and crispy.
  12. Remove from oven, let cool for a minute, then slice and serve immediately.
