Description

These classic dilly green beans are the perfect addition to any pantry or picnic table. Fresh green beans are packed tightly with aromatic dill heads, pungent garlic cloves, and a hint of spicy red pepper. They are submerged in a bright, vinegar-based brine that preserves their crisp texture while infusing them with bold, zesty flavor. Ideal served cold as a side dish, added to salads, or enjoyed straight from the jar as a snack. The flavors meld beautifully over a few weeks, making them a rewarding homemade treat for gatherings or quiet evenings at home.

Ingredients

Directions

  1. Wash the green beans thoroughly and trim the stems and tips.
  2. Cut the beans into uniform lengths so they stand upright in the jars.
  3. Prepare seven clean, hot pint-sized canning jars with lids and seals ready in scalding water.
  4. Place one fresh dill head (or 1/2 teaspoon dill seed) into the bottom of each jar.
  5. Add one garlic clove and 1/4 teaspoon crushed dried hot red pepper to each jar.
  6. Pack the green beans tightly upright into the jars, leaving 1 inch of headspace at the top.
  7. In a large pot, combine 5 cups vinegar, 5 cups water, and 1 cup less 1 tablespoon of non-iodized pickling salt.
  8. Heat the brine mixture over medium-high heat until it comes to a rolling boil.
  9. Ladle the hot brine over the beans, filling each jar to within 1/2 inch of the top.
  10. Run a non-metallic utensil down the sides of each jar to release trapped air bubbles.
  11. Wipe the rims of the jars clean, place lids on top, and screw on the bands until fingertip-tight.
  12. Process the jars in a boiling water bath canner for 10 minutes after the water returns to a simmer.
  13. Remove the jars from the canner and let them cool undisturbed for 24 hours to seal.
  14. Check seals, store in a cool dark place, and wait at least two weeks for flavors to develop before eating.
