Description

This robust chili is a competition-tested favorite known for its intense flavor and rich texture. It combines lean ground beef and pork shoulder with a complex blend of spices, including cumin, allspice, and blackstrap molasses for depth. A splash of beer and sour mash whiskey adds a unique savory note, while fresh jalape&# 195;±os provide a sharp heat. Slow simmering allows the flavors to meld into a thick, hearty stew that is perfect for cold nights or game day gatherings. Serve it over rice or with cornbread for a satisfying, home-cooked meal that brings everyone to the table.

Ingredients

Directions

  1. Heat peanut oil or bacon grease in a large heavy-bottomed pot over medium-high heat.
  2. Add chopped onions, green bell pepper, red bell pepper, and crushed garlic; sauté until softened, about 5 minutes.
  3. Add the lean ground beef and pork shoulder to the pot; cook, breaking up the meat, until browned.
  4. Stir in the stewed tomatoes, tomato sauce, tomato paste, beer, sour mash whiskey, Vietnamese hot sauce, soy sauce, bay leaves, blackstrap molasses, and allspice.
  5. Bring the mixture to a boil, stirring constantly to prevent sticking.
  6. Boil vigorously for 3 to 5 minutes, then reduce heat to low to maintain a gentle simmer.
  7. Cover and simmer for 10 minutes, then stir in 1 tablespoon of fresh ground cumin.
  8. Continue to simmer uncovered for 1 hour, stirring occasionally to prevent burning.
  9. Add the remaining 1 tablespoon of cumin and the chopped jalapeños (seeded and gashed as desired).
  10. Simmer for an additional 15 minutes to allow flavors to meld.
  11. Remove bay leaves before serving. Taste and adjust salt or heat if desired.
