Description

This elegant duck leg ragout is a masterpiece of French comfort food, where rich, savory duck meat meets the sweet-tart depth of plump prunes and deeply caramelized onions. The dish is braised slowly in red wine and stock, allowing the flavors to meld into a luxurious, glossy sauce that clings to the meltingly tender meat. Aromatics like thyme, garlic, and shallots provide a fragrant backbone, while a hint of Dijon mustard adds a subtle kick. Perfect for a special weekend dinner or a cozy autumn evening, this recipe delivers restaurant-quality results with home-style warmth. It pairs beautifully with creamy mashed potatoes or crusty bread to soak up the delicious juices.

Ingredients

Directions

  1. Preheat oven to 325&# 194;°F (165ðC). Pat duck legs dry and season generously with salt and pepper.
  2. Heat a heavy-bottomed Dutch oven or braiser over medium-high heat. Sear duck legs skin-side down for 5-7 minutes until skin is golden and crispy. Flip and sear other side for 2 minutes. Remove duck and set aside.
  3. In the same pot, reduce heat to medium. Add sliced onions and cook until softened and caramelized, about 10 minutes. Add garlic and cook for 1 minute until fragrant.
  4. Add smoked pork belly (cut into lardons if not already) and carrots to the pot. Stir to combine.
  5. Pour in red wine and red wine vinegar, scraping up any browned bits from the bottom of the pot. Let simmer for 2 minutes to reduce slightly.
  6. Stir in Dijon mustard, dried thyme, and chicken stock. Add pitted prunes.
  7. Nestle duck legs back into the pot, skin-side up. Ensure liquid comes halfway up the sides of the duck.
  8. Cover pot with a tight-fitting lid. Transfer to the preheated oven and braise for 1 hour to 1 hour 15 minutes, until duck meat is tender and pulls away from the bone.
  9. Remove from oven. Transfer duck legs to a platter and tent with foil to keep warm.
  10. Place the pot on the stove over medium heat. Simmer the sauce for 5-10 minutes to thicken slightly. Taste and adjust seasoning with salt and pepper if needed.
  11. Spoon the sauce, onions, prunes, and vegetables over the duck legs. Garnish with chopped parsley and serve immediately.
