Description

This traditional Chinese dish transforms humble duck webs into a luxurious, melt-in-your-mouth delicacy. The long, slow simmering process breaks down the collagen, resulting in a succulent texture that is both tender and slightly chewy. The sauce is a masterful blend of savory oyster sauce, aromatic ginger, and sweet rice wine, creating a deep, umami-rich flavor profile. Earthy dried Chinese mushrooms add a meaty depth and pleasant texture contrast. Often served as a shared plate during festive gatherings or family dinners, this dish is perfect for those who appreciate bold, comforting flavors. It pairs beautifully with steamed white rice to soak up the glossy, thickened sauce.

Ingredients

Directions

  1. Soak the dried Chinese mushrooms in warm water until soft, then drain and trim the tough stems.
  2. Peel and crush the ginger root; chop the scallions (spring onions).
  3. Remove the outer skin from the duck webs, wash them thoroughly, and pat dry.
  4. Heat 2 tablespoons of oil in a wok or large skillet over medium-high heat.
  5. Add the crushed ginger and chopped scallions, stir-frying for 30 seconds until fragrant.
  6. Toss in the duck webs, stirring to coat them in the oil and aromatics.
  7. Pour in the rice wine (or sherry) and soy sauce, stirring to deglaze the pan.
  8. Transfer the duck webs and liquid to a heavy-bottomed pot or casserole dish.
  9. Add the sugar, salt, star anise, and enough water or stock to cover the duck webs.
  10. Bring to a boil, then reduce heat to low, cover, and simmer gently for 3 hours until very tender.
  11. While the duck simmers, blanch the broccoli in boiling salted water for 2 minutes, then drain.
  12. Heat a little oil in a small saucepan, add the drained mushrooms, and stir-fry briefly with a pinch of salt and sugar.
  13. Arrange the stir-fried broccoli and mushrooms on a serving platter.
  14. Spoon the braised duck webs and their cooking liquid over the vegetables.
  15. In a separate small pan, heat a little oil, add the oyster sauce and sesame seed oil.
  16. Mix cornstarch with a little cold water to form a slurry; stir into the oyster sauce mixture.
  17. Simmer the sauce until thickened and smooth, then pour it over the duck webs.
  18. Serve immediately while hot.
