Description

This Dynamite Chili is a robust, flavor-packed dish that brings the warmth of traditional Mexican-inspired cooking to your table. Featuring tender cubes of boneless pork simmered until fork-tender, this chili is loaded with earthy cumin, aromatic oregano, and the gentle heat of fresh jalape&# 195;±os. The addition of whole tomatoes and soaked pinto beans creates a thick, hearty texture that is perfect for cold evenings. ItâÂÂs an ideal weeknight dinner that tastes even better the next day as the flavors meld together. Ingredients

Directions

  1. Soak pinto beans overnight, then drain and rinse them thoroughly.
  2. Place the drained beans in a medium saucepan, cover with water, and bring to a boil. Reduce heat and simmer until tender, about 1 hour.
  3. While beans cook, heat oil or bacon drippings in a large skillet or Dutch oven over medium-high heat.
  4. Add sliced onion, chopped green pepper, and minced garlic to the skillet. Sauté until vegetables are tender and translucent.
  5. Add cubed boneless pork (and stew meat if using) to the skillet. Brown the meat well on all sides.
  6. Transfer the browned meat and vegetable mixture to a large pot or Dutch oven if not already using one.
  7. Add the cooked beans along with their cooking liquid, canned whole tomatoes (crushed slightly), chili powder, dried Mexican oregano, cumin, and diced jalapeño.
  8. Stir in dry red wine, then season with salt and fresh ground pepper to taste. Mix everything well.
  9. Cover the pot and simmer the chili on low heat for 1 hour, allowing the flavors to meld and the pork to become tender.
  10. Uncover and cook for an additional 30 minutes to reduce and thicken the sauce slightly.
  11. If the chili is too thin, mix tortilla flour with a little water to form a paste and stir it in to thicken. Adjust seasoning if needed and serve hot.
