  1. Partially freeze the beef top round steak until firm, then slice across the grain into thin 1/8-inch strips.
  2. In a small bowl, whisk together water, cornstarch, dry sherry, and soy sauce until smooth; set aside.
  3. Heat 1 tablespoon of peanut oil in a large wok or frying pan over medium-high heat.
  4. Add the chopped walnuts and stir-fry for 1-2 minutes until lightly browned and fragrant; remove from pan and set aside.
  5. Add the remaining 1 tablespoon of oil to the hot pan.
  6. Add the slivered garlic and half of the beef strips to the pan.
  7. Stir-fry the beef and garlic for about 1 minute until the beef is seared but still slightly pink inside.
  8. Remove the beef and garlic from the pan and set aside; repeat with the remaining beef strips.
  9. Add the frozen vegetable mixture to the hot pan.

  11. Return the cooked beef strips and garlic to the pan with the vegetables.
