Ingredients

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef and ground pork.
  3. Finely dice the green bell pepper and onion, then add them to the meat mixture.
  4. Add the meat loaf mix according to the package instructions and mix thoroughly until well combined.
  5. Drain the jalapeño peppers and remove the seeds if you prefer less heat.
  6. Place half of the meat mixture into a 9x12 inch roasting pan, pressing it down evenly to form a base layer.
  7. Arrange three whole jalapeño peppers on top of the meat layer in the pan.
  8. Cover the jalapeños with thin slices of Monterey Jack cheese.
  9. Spread the remaining meat mixture over the cheese layer, sealing the ingredients inside.
  10. Bake in the preheated oven for 1 hour and 15 minutes.
  11. Remove the pan from the oven and pour the spicy tomato sauce evenly over the top.
  12. Return to the oven and bake for the final 15 minutes, or until the meat loaf is cooked through.
  13. Let rest for 5 minutes before slicing. Serve with mashed potatoes, gravy, and a green salad.
