  1. In a heavy large saucepan, combine the whipping cream and half-and-half. Bring to a gentle simmer over medium heat, stirring occasionally.
  2. Whisk in the granulated sugar and unsweetened cocoa powder until the sugar is completely dissolved and the mixture is smooth.
  3. Remove the saucepan from the heat. Add the coarsely chopped semisweet chocolate and stir continuously until the chocolate is fully melted and incorporated.
  4. In a separate bowl, have the beaten eggs ready. Gradually whisk about 1/2 cup of the hot chocolate mixture into the eggs to temper them, ensuring the eggs do not scramble.
  5. Pour the tempered egg mixture back into the saucepan with the remaining chocolate mixture, stirring constantly.
  6. Return the saucepan to medium-low heat. Cook, stirring constantly with a wooden spoon, until the mixture thickens enough to coat the back of the spoon and leaves a clear path when your finger is drawn across it, about 10 to 15 minutes.
  7. Strain the custard through a fine-mesh sieve into a bowl set over a larger bowl filled with ice water to stop the cooking process immediately.
