Description

These classic Chinese-style egg rolls offer a perfect balance of textures and flavors. The wrapper turns delightfully crisp in hot oil, encasing a savory filling of tender roast pork, sweet shrimp, and crunchy water chestnuts and bamboo shoots. Fresh bean sprouts and green onions add brightness and moisture, while soy sauce and sesame oil provide a rich, umami depth. Ideal for holidays, parties, or a hearty appetizer, these rolls are best served immediately while hot and crunchy. A favorite potluck dish that brings home-style comfort to any gathering.

Ingredients

Directions

  1. Beat one egg in a small bowl and set aside for sealing the rolls. Pour enough oil into a deep pot or wide skillet to reach a depth of 2 inches for deep frying.
  2. In a large skillet, heat sesame oil over high heat. Add diced roast pork and cooked, diced shrimp, cooking until slightly browned.
  3. Add chopped bean sprouts, water chestnuts, bamboo shoots, mushrooms, and green onions to the skillet. Stir-fry for approximately 2 minutes until vegetables are tender-crisp.
  4. Stir in sugar, soy sauce, salt, and pepper. Cook for another minute to combine flavors, then remove from heat and allow the filling to cool completely.
  5. Lay an egg roll skin flat on a clean surface. Place 2 tablespoons of the cooled filling in the center of the skin.
  6. Fold the two opposite ends of the skin inward over the filling. Moisten the remaining two edges with the beaten egg.
  7. Roll the skin tightly into a log shape, pressing the egg-sealed edge to secure it.
  8. Heat the oil to 350&# 194;°F (175ðC). Carefully lower the egg rolls into the hot oil, frying until golden brown and crisp, turning occasionally for even browning.
  9. Remove the fried egg rolls from the oil and place them on paper towels to drain excess oil. Serve immediately while hot.
