  1. Preheat oven to 350&# 194;°F (175°C).
  2. Stem the eggplants and cut each in half lengthwise.
  3. Cut each half crosswise into 4 chunks.
  4. In a covered saucepan, simmer the eggplant chunks in water to cover for 15 minutes.
  5. Drain the eggplant and set aside to cool until manageable.
  6. Separate the pulp from the skin, taking care not to tear the skin; reserve the skins.
  7. In a large bowl, vigorously mash the cooled eggplant pulp with the mashed garlic.
