  1. Prepare the shortcrust pastry case by blind-baking it thoroughly until golden and crisp; set aside to cool completely.
  2. In a small bowl, dissolve 2 tablespoons of sugar in 4 tablespoons of boiling water.
  3. Add a cinnamon stick and 1/4 pint of cold water to the sugar solution.
  4. Wash the oranges thoroughly, then use a citrus zester to lightly flute the peel.
  5. Thinly slice the oranges, discarding the ends, and remove any pips (seeds).
  6. Place the orange slices into the sweetened water mixture and let them soak overnight in the refrigerator.
  7. The next day, transfer the oranges and the soaking liquid into a saucepan.
  8. Cover the saucepan and cook gently over low heat for about 30 minutes, carefully turning the slices once to ensure even poaching.
  9. Lift the cooked orange slices from the pan one at a time, allowing the syrup to drip back, and place them on a rack to drain and cool.
  10. Remove the cinnamon stick from the remaining syrup and boil it vigorously until reduced to a few sticky spoonfuls.
  11. Allow the syrup to cool slightly, then stir in 1 tablespoon of honey.
  12. In a separate bowl, mix 1/4 lb of fromage blanc (or low-fat soft cheese) with 1 teaspoon of honey and a pinch of ground cinnamon and allspice.
