Emeril’S Bbq Ribs
Description
These Emeril-style BBQ ribs are the ultimate comfort food, featuring tender baby back ribs bathed in a rich, homemade glaze. The sauce is a vibrant blend of sweet plums, smoky molasses, tangy vinegar, and a kick of Creole seasoning, creating a complex flavor profile that is both sweet and savory. Slow-cooked until fork-tender and then grilled to perfection, the ribs develop a sticky, caramelized exterior while remaining juicy inside. This dish is perfect for summer cookouts, family gatherings, or any occasion where you want to impress with a hearty, flavorful main course that feels like it came straight from a New Orleans kitchen.Ingredients
Directions
-
Prepare the ribs by removing the membrane from the back of the racks and patting them dry with paper towels.
-
Generously season both sides of the ribs with Creole seasoning, salt, and black pepper.
-
In a medium saucepan, combine the peeled plums, minced garlic, chicken stock, ketchup, molasses, honey, distilled white vinegar, soy sauce, dry mustard, 1 teaspoon of salt, and 6 turns of black pepper.
-
Bring the sauce mixture to a boil over high heat, stirring to dissolve the molasses and mustard.
-
Reduce the heat to medium-low and simmer uncovered for 15 minutes, allowing the flavors to meld and the plums to soften.
-
Transfer the hot mixture to a blender or food processor and puree until completely smooth.
-
Preheat your grill to medium-low indirect heat or preheat your oven to 300&# 194;°F (150ðC).
-
Cook the ribs using indirect heat on the grill or in the oven for approximately 2 to 2.5 hours, basting occasionally with the plum glaze, until the meat is tender and pulls away from the bones.
-
Increase the grill heat to medium-high or broil in the oven for the last 5-10 minutes, basting frequently with the remaining glaze to create a sticky, caramelized crust.
-
Remove the ribs from the heat and let them rest for 10 minutes before slicing between the bones and serving.
