  1. Using a meat mallet, pound the conch meat flat to tenderize it.
  2. Using a sharp knife, dice the pounded conch into small, uniform pieces.
  3. Heat the vegetable oil in a skillet over medium-high heat.
  4. Add the chopped onions to the hot skillet.
  5. Season with Essence of Emeril and sauté for about 3 minutes, or until the onions are slightly wilted.
  6. Season the diced conch with Essence of Emeril.
  7. Add the seasoned conch to the skillet with the onions and sauté for 2 minutes.
  8. Stir in the chopped garlic and cook briefly to release its aroma.
  9. Remove the skillet from heat and let the conch mixture cool completely.
  10. In a large bowl, beat the eggs, milk, baking powder, salt, and cayenne pepper together.
  11. Gradually add the flour, 1/4 cup at a time, beating continuously until the batter is smooth and all flour is incorporated.
  12. Stir the chopped parsley into the batter.
  13. Fold the cooled conch mixture into the batter until evenly distributed.
  14. Heat the solid vegetable shortening in a deep fryer or heavy pot to 360 degrees F (182°C).
  15. Using a heaping tablespoon, drop portions of the batter into the hot oil.
