Description

Creating a sourdough starter is the essential first step in baking artisan bread. This simple mixture of unbleached flour and water cultivates wild yeast and bacteria, resulting in a lively, bubbling culture. The starter develops a distinctively sour aroma and flavor profile that enhances the taste and texture of your final loaf. It requires patience and daily feeding over several days to become active and reliable. Once established, this vegan-friendly starter can be maintained indefinitely, providing a sustainable source of leavening for endless batches of homemade bread. It pairs perfectly with any meal, offering a rustic, wholesome addition to your kitchen repertoire.

Ingredients

Directions

  1. In a large glass bowl, combine 1/2 cup whole grain rye flour, 1 cup unbleached flour, and 1 cup bottled still water.
  2. Stir the mixture thoroughly with a spoon until all flour is fully incorporated and no dry lumps remain.
  3. Cover the bowl loosely with a kitchen towel or plastic wrap with holes poked in it to allow airflow.
  4. Set the bowl aside at room temperature to ferment for 2 to 3 days.
  5. Observe the starter as it begins to smell sour; this indicates the wild yeast culture is developing.
  6. Stir in an additional 2/3 cup of flour and 1/2 cup of water into the mixture.
  7. Cover the bowl again and continue to ferment at room temperature.
  8. Repeat the feeding process daily for the next 3 days, stirring in equal parts flour and water.
  9. Notice the starter becoming sharper, more pungent, and visibly bubbly as it matures.
  10. Once the starter is active and sharp enough to your liking, it is ready to use for baking.
  11. After removing the amount needed for your recipe, refrigerate the remaining starter to slow fermentation.
  12. Allow the starter to come to room temperature before each subsequent use.
