  2. In a small saucepan over medium heat, warm the skim milk, vegetable oil, and honey together until the mixture reaches 120ðF (49ðC). It should feel hot but not scalding to the touch.
  3. Pour the warm liquid mixture into the bowl with the dry ingredients. Add the lightly beaten egg whites.
  4. Stir the mixture with a wooden spoon or dough hook, gradually adding 1 cup of the remaining flour until a shaggy, cohesive dough mass forms.
  5. Turn the dough out onto a lightly floured work surface. Knead for 8-10 minutes, adding small amounts of additional flour as needed, until the dough is smooth, elastic, and no longer sticky.
  6. Place the kneaded dough into a lightly oiled large bowl, turning it once to coat the top with oil. Cover the bowl tightly with a damp kitchen towel or plastic wrap.
  7. Let the dough rise in a warm, draft-free spot for about 1 hour 30 minutes, or until it has doubled in size.
