Eugenia Potter’S 27 Ingredient Chili Con Carn
Description
This robust Chili Con Carne is a true comfort food masterpiece, combining tender chunks of sirloin and savory pork sausage with hearty pinto and baked beans. The deep, rich flavor profile comes from a careful balance of chili powder, cumin, fresh orange zest, and aromatic herbs like oregano and cilantro. Vegetables such as onions, peppers, mushrooms, and celery add texture and earthiness, while the long simmer allows all 27 ingredients to meld into a cohesive, thick stew. Perfect for feeding a crowd, potlucks, or a cozy family dinner on a chilly evening, this dish offers a satisfying, rustic meal that tastes even better the next day.Ingredients
Directions
-
Wash the dry pinto beans and soak them in plenty of water overnight.
-
Drain the soaked beans, place them in a pot, cover with fresh water, bring to a boil, then reduce heat and simmer for 2-3 hours until tender. Drain and set aside.
-
While the beans cook, melt butter or margarine in a large skillet over medium heat.
-
Add chopped onions, diced green chili peppers, and minced garlic to the skillet. Sauté until the onions are soft and translucent.
-
Add the chopped sirloin beef to the skillet. Cook over moderate heat, stirring occasionally, until the meat is browned.
-
In a separate pan, brown the pork sausage. Once cooked, pour off any excess fat.
-
Add the browned sausage to the skillet with the beef and onion mixture.
-
Sprinkle the flour over the meat mixture and stir well to blend, coating the meat thoroughly.
-
Transfer the meat and flour mixture to a large Dutch oven or 8-quart kettle.
-
Add the cooked pinto beans, canned baked beans, pimiento strips, canned tomatoes, chopped celery, sliced mushrooms, chopped red and green bell peppers, chopped black olives, minced parsley, bottled chili sauce, salt, garlic salt, black pepper, chopped cilantro, oregano, chili powder, and grated orange peel.
-
Stir all ingredients together well to combine.
-
Bring the mixture just to a boil.
-
Reduce the heat to low, cover partially, and simmer for about 30 minutes, stirring occasionally to prevent sticking.
-
Skim off any fat that rises to the surface using a cold spoon.
-
Serve hot, topped with a dollop of sour cream if desired.
