Ingredients

Directions

  1. Place skinned, boned, and halved chicken breasts in a gallon-sized Zip-lock bag.
  2. Flatten chicken breasts inside the bag using a wooden rolling pin until they are 1/8" to 1/4" thick.
  3. In a small bowl, combine apple cider vinegar, honey, minced garlic, grated ginger, cayenne pepper, salt, black pepper, and chopped chives.
  4. Microwave the marinade mixture briefly if needed to help the honey dissolve and blend smoothly.
  5. Pour the marinade into the bag with the chicken and seal securely.
  6. Massage the bag to ensure all chicken pieces are evenly coated with the marinade.
  7. Refrigerate the chicken in the marinade for up to 2 hours.
  8. Remove chicken from the refrigerator and let sit at room temperature for 10 minutes.
  9. Spread sifted cornstarch on a plate for dredging.
  10. Heat vegetable oil in a non-stick pan over moderately high heat.
  11. Remove chicken from the marinade, blot lightly with paper towels, and dredge lightly in cornstarch.
  12. Sauté chicken in the hot oil for a couple of minutes on each side until just cooked through.
  13. Remove chicken from the pan and set aside, then drain any excess oil from the pan.
  14. Pour the remaining marinade from the bag into the pan.
  15. Add the drained peaches (and reserved juices if needed) to the pan.
  16. Reduce heat to medium and bring the sauce to a boil, stirring occasionally.
  17. If the sauce is too thin, add a little cornstarch-water mixture to thicken slightly.
  18. Return chicken to the pan to coat in the sauce.
  19. Sprinkle with chopped Italian parsley and serve immediately with juices over rice.
