Felipe’S Chili Con Carne
Description
This traditional American-style chili is a hearty, comforting dish that relies on slow cooking to develop deep, complex flavors. The combination of coarsely ground beef, fresh aromatics like garlic and onions, and a blend of spices including paprika, oregano, and cumin creates a robust profile. Slow simmering allows the meat to become incredibly tender while the dried chili pods infuse the broth with subtle heat. Thickened naturally with pulverized oyster crackers, this chili offers a satisfying texture that is perfect for cold evenings. It is an excellent choice for family dinners, potlucks, or meal prepping, as the flavors often improve after resting overnight. Serve it hot with cornbread or over rice for a complete meal.Ingredients
Directions
-
Grind the fresh kidney suet and melt it slowly in a large, heavy-bottomed cooking pot over medium heat until fully liquefied.
-
Add the coarsely ground beef to the melted suet along with 1 pint of water.
-
Stir frequently to break up the meat and ensure it browns evenly throughout the pot.
-
While the meat browns, combine fresh garlic buttons, large onions, and El Chico green chilies in a blender.
-
Blend the aromatics until smooth to create a fresh vegetable juice.
-
Add the dried seasonings to the pot: 10 tablespoons paprika, 2 tablespoons oregano, 3 tablespoons cumin, 4 tablespoons salt, and cayenne pepper to taste.
-
Pour in the blended vegetable juice, 24 ounces of tomato juice, and 12 ounces of carrot juice.
-
Stir well to combine all ingredients and bring the mixture to a gentle simmer.
-
Float 4 large dried chili pods on top of the chili to infuse flavor without burning.
-
Cover and simmer gently for about 3 hours, stirring occasionally, until the meat is very tender.
-
Near the end of cooking, mix 1 1/2 cups of pulverized oyster crackers with 1 cup of water to form a slurry.
-
Stir the cracker slurry into the chili to thicken the consistency.
-
Continue to simmer for a few more minutes until the desired thickness is reached.
-
Remove the dried chili pods from the pot before serving.
-
For best results, allow the chili to rest in the pot overnight to develop deeper flavors before reheating and serving.
