  1. Preheat oven to 350F (177C) (optional, for warming margarine if not already melted). In a small bowl, combine graham cracker crumbs, 1/4 cup sugar (reserved from total), and melted margarine.
  2. Press the crumb mixture firmly and evenly onto the bottom of a 9-inch springform pan. Refrigerate while preparing the filling.
  3. Sprinkle gelatin over cold water in a small saucepan. Let stand for 5 minutes to soften.
  4. Stir the gelatin mixture over low heat until dissolved. Remove from heat.
  5. In a separate saucepan, combine 3/4 cup sugar and beaten egg yolks. Cook over low heat, stirring constantly, for 3 minutes to thicken slightly. Do not boil.
  6. Gradually whisk the hot egg yolk mixture into the dissolved gelatin. Stir in the bourbon.
  7. In a large mixing bowl, beat the softened cream cheese and cocoa at medium speed until smooth and well blended.
  8. Gradually add the gelatin-bourbon mixture to the cream cheese, mixing until well combined.
  9. Chill the cheese mixture in the refrigerator until it thickens but has not fully set, approximately 30-45 minutes.
  10. In a clean, dry bowl, beat the egg whites until foamy. Gradually add the remaining sugar, beating until stiff peaks form.
  11. Gently fold the beaten egg whites and the whipped cream into the thickened cheese mixture in two additions, taking care not to deflate the air.
  12. Pour the filling over the chilled crust in the springform pan. Smooth the top.
  13. Refrigerate for at least 4 hours, or until firm enough to slice.
  14. Before serving, garnish with chocolate curls and small silver candy balls, if desired.
