  1. Preheat oven to 350F (175C). Combine graham cracker crumbs, 1/4 cup sugar, and melted margarine in a bowl until moistened. Press mixture firmly onto the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then let cool completely.
  2. Sprinkle gelatin over cold water in a small bowl and let stand for 5 minutes to soften.
  3. In a small saucepan, combine the softened gelatin mixture with 3/4 cup sugar and beaten egg yolks. Cook over low heat, stirring constantly, for 3 minutes until the gelatin is dissolved and mixture is warm. Do not boil.
  4. In a large mixing bowl, beat the softened cream cheese and cocoa powder using an electric mixer on medium speed until smooth and well blended.
  5. Gradually pour the warm gelatin-egg mixture into the cream cheese mixture, beating until fully incorporated. Stir in the bourbon.
  6. Refrigerate the cheese mixture for about 15-20 minutes, stirring occasionally, until it thickens slightly but is not yet set.
  7. In a clean bowl, beat the egg whites until foamy. Gradually add the remaining 1/4 cup sugar while beating on high speed until stiff peaks form.
  8. Gently fold the beaten egg whites and the whipped cream into the thickened cheese mixture until just combined. Be careful not to deflate the mixture.
  9. Pour the filling over the cooled crust. Smooth the top with a spatula.
  10. Refrigerate for at least 4 hours, or overnight, until firm.
  11. Garnish with chocolate curls and small silver candy balls before serving, if desired.
