Feuillete D’Escargots Et Cepes Au Santenay
Description
This sophisticated French appetizer features delicate, golden puff pastry shells filled with a luxurious mixture of sautéed snails, chanterelles, and cepes. The earthy mushrooms complement the tender snails, all bound together by a robust sauce reduced from full-bodied Santenay red wine and finished with Bordelaise sauce or veal stock. The dish offers a complex interplay of flavors, from the aromatic Cognac flambé to the savory depth of the reduced wine. Ideal for a romantic dinner, a special holiday gathering, or an elegant party starter, this recipe transforms simple ingredients into a refined culinary experience that showcases classic French technique.Directions
-
Roll out puff pastry to a large rectangle, approximately 1/8-inch thick.
-
Use a 5-inch oval or 4-inch round cutter to cut out 4 pieces of pastry for the shells and 4 smaller pieces for the lids.
-
Place the pastry pieces on a baking sheet.
-
Stir together the egg yolk and 1 1/2 teaspoons of cold water to make an egg wash.
-
Lightly brush the pastry shells and lids with the egg wash.
-
Chill the pastry for 30 minutes in the refrigerator.
-
Preheat oven to 400°F (200°C).
-
Bake the feuilletes for 20 minutes.
-
Lower the oven temperature to 350°F (175°C) and continue baking for 5 to 10 minutes, until golden brown.
-
Remove from oven and cool on a wire rack.
-
In a saucepan, heat 3 tablespoons of butter over medium-high heat.
-
Add the finely chopped shallots and stir until wilted, about 2 minutes.
-
Add the chanterelles and cepes mushrooms, stirring until they release their moisture and become quite dry, 6 to 8 minutes.
-
Add the drained snails to the pan and toss well with the mushrooms.
-
Add 3 tablespoons of Cognac. Carefully ignite the alcohol with a long-handled match to flambé, cooking for 1 to 2 minutes until the flames subside.
-
Transfer the snail and mushroom mixture to a sieve placed over a bowl to drain excess liquid, then return the mixture to the pan.
-
Pour the red wine into the hot pan and reduce by half, scraping up any browned bits from the bottom, about 4 minutes.
-
Add the Bordelaise sauce (or veal stock) and reduce until thickened enough to coat the back of a spoon, 3 to 5 minutes.
-
Remove the pan from heat.
-
Swirl in the remaining 2 tablespoons of butter, a little at a time, until emulsified.
-
Season the sauce with salt, pepper, and a few drops of Cognac to taste.
-
Slice the tops off the cooled feuilletes and scoop out the soft interior to create hollow shells.
-
Return the shells and lids to the oven briefly to reheat and crisp.
-
In a small saucepan, combine the additional coarsely chopped mushrooms, 1 tablespoon of water, lemon juice, and 1 tablespoon of butter.
-
Bring to a boil over medium-high heat, cover, and cook, shaking the pan occasionally, until just tender, about 4 minutes.
-
Remove the garnish mushrooms from the pan, drain, and cut into thick slices.
-
Add the snail-mushroom mixture back into the reduced wine sauce and bring to a gentle simmer.
-
Place the heated pastry shells on 4 heated plates.
-
Fill the shells with the hot snail and mushroom mixture.
-
Garnish by overlapping the thick slices of garnish mushrooms along one edge of each shell.
-
Spoon any remaining sauce over the filling.
-
Replace the pastry lids at a slight angle and serve immediately.
