Description

These classic Berlin doughnuts offer a perfect balance of tender, pillowy texture and rich flavor. Made with a yeasted dough enriched with butter and eggs, they puff up beautifully when deep-fried. The golden-brown exterior gives way to a soft interior, which is then filled with your favorite jam or jelly for a burst of sweetness. Ideal for weekend brunches, holiday gatherings, or as a comforting treat with coffee, these homemade doughnuts are far superior to store-bought versions. The addition of a hint of rum extract and orange juice adds a sophisticated depth to the dough. Simple to prepare with pantry staples, this recipe yields a generous batch of irresistible pastries.

Ingredients

Directions

  1. Dissolve yeast in warm water and let stand until foamy, about 5 minutes.
  2. In a large bowl, combine sugar, salt, butter, orange juice, and rum extract.
  3. Pour scalded milk over the mixture and stir until the butter is melted.
  4. Cool the mixture to lukewarm temperature.
  5. Blend in 1 cup of flour and beat until smooth.
  6. Stir in the yeast mixture.
  7. Add half of the remaining flour and beat until smooth.
  8. Beat in the eggs.
  9. Beat in enough of the remaining flour to make a soft dough.
  10. Turn dough onto a lightly floured surface and let rest for 5 to 10 minutes.
  11. Knead dough until smooth and elastic, about 8 to 10 minutes.
  12. Form dough into a ball and place in a greased deep bowl; turn to coat top with grease.
  13. Cover and let rise in a warm place until double in bulk, about 1 hour.
  14. Punch down dough.
  15. Turn dough onto a lightly floured surface and roll out to 1/2 inch thickness.
  16. Cut dough into rounds using a 3-inch cutter.
  17. Cover with waxed paper and let rise on a rolling surface away from drafts until double in bulk, about 30 to 45 minutes.
  18. Heat oil in a deep fryer or heavy pot to 375°F (190°C).
  19. Fry doughnuts in batches, ensuring they float uncrowded in one layer.
  20. Fry for 2 to 3 minutes, turning when they rise to the surface, until lightly browned on both sides.
  21. Remove from oil and drain on absorbent paper.
  22. Allow doughnuts to cool completely.
  23. Cut a slit in the side of each doughnut to the center.
  24. Fill each doughnut with about 1/2 teaspoon of jam or jelly using a pastry bag or spoon.
  25. Press the slit lightly to close.
  26. Serve immediately or store in an airtight container.
