This elegant dish features tender veal steaks pan-seared to perfection and topped with a luxurious sauce of fresh mushrooms, Armagnac, Madeira, and cream. The steaks are served on golden-brown butter-fried bread slices, layered with warm boiled ham for added savory depth. The combination of the delicate veal, earthy mushrooms, and rich dairy creates a sophisticated flavor profile that is both comforting and refined. Ideal for special occasions or a hearty weeknight dinner, this international-style main brings restaurant-quality taste to your home table. Garnished with fresh parsley and lemon slices, it offers a bright finish to balance the richness of the sauce.

Ingredients

Directions

  1. Wash and thoroughly dry the veal steaks with paper towels.
  2. Season the veal steaks generously with salt and pepper.
  3. Heat 3 tablespoons of butter in a large skillet over medium-high heat.
  4. Fry the veal steaks for about 2 minutes on each side to sear.
  5. Reduce heat to medium and continue frying each side for another 5 minutes until cooked to desired doneness.
  6. Remove veal steaks from the skillet and keep warm.
  7. In the same skillet, add more butter if needed and fry 4 slices of white bread until golden brown on both sides.
  8. Remove the fried bread, place on paper towels to drain, and keep warm.
  9. Warm 4 slices of boiled ham in the skillet butter, then remove and cut to fit the bread slices.
  10. Arrange the fried bread on pre-warmed plates and top each with a slice of ham and a veal steak.
  11. Clean and slice 5 oz of fresh mushrooms.
  12. In the same skillet, add remaining butter and sauté the mushrooms for 2-3 minutes.
  13. Stir in 2 tablespoons of Armagnac and 2 tablespoons of Madeira, scraping up any browned bits from the bottom of the pan.
  14. Add 4 tablespoons of sweet cream to the skillet and simmer gently until the sauce thickens slightly.
  15. Pour the mushroom cream sauce over the veal steaks.
  16. Garnish with lemon slices and fresh parsley sprigs.
  17. Serve immediately while hot.
