Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC). Grease a baking sheet.
  2. In a large bowl, beat butter, 1/3 cup sugar, and almond extract until light and fluffy.
  3. Add flour and salt to the butter mixture. Mix well by hand or with a mixer until a cohesive dough forms.
  4. On a lightly floured surface, shape the dough into a single roll approximately 6 inches long.
  5. Cut the roll lengthwise into 6 equal strips.
  6. Shape each strip into a thinner roll, about 12 inches long and 3/4 inch in diameter.
  7. Cut each long roll into 6 pieces, each about 2 inches long.
  8. Place the log pieces on the prepared baking sheet, spacing them 1 inch apart.
  9. In a small bowl, mix the remaining 1/4 teaspoon sugar with the finely chopped almonds.
  10. Lightly brush the top of each log with the beaten egg.
  11. Sprinkle the almond and sugar mixture evenly over the egg-washed logs.
  12. Bake for 15 to 20 minutes, or until the logs are lightly golden brown.
  13. Remove from oven and allow to cool completely on the baking sheet.

Note

Storage: Store cooled Finnish Logs in an airtight container at room temperature for up to 5 days. They can also be frozen for longer storage; thaw at room temperature before serving.

Ingredient Substitution: If you prefer a stronger nut flavor, you can increase the amount of chopped almonds. For a vegan version, substitute butter with a high-quality plant-based margarine and use a flax egg instead of the regular egg for brushing.

Tip: Ensure the butter is softened but not melted for the best texture. If the dough feels too sticky, chill it in the refrigerator for 15 minutes before shaping.
