Directions

  1. Heat a small skillet over low heat until hot to the touch.
  2. Add pine nuts, reduce heat to very low, and toast, shaking pan frequently, until evenly golden, about 2 minutes. Set aside.
  3. Heat oven to 500°F (260°C).
  4. Oil a 12-inch pizza pan as necessary for your pan type; sprinkle with cornmeal if desired.
  5. In a medium bowl, combine 1 tablespoon of olive oil, the white wine vinegar, and minced garlic.
  6. Add the zucchini and red onion to the bowl, tossing to coat evenly.
  7. Prepare the Whole Wheat Pizza Dough according to your recipe instructions.
  8. Place the dough in the prepared pan and brush the surface with the remaining olive oil.
  9. Sprinkle half of the grated provolone evenly over the dough, leaving a 3/4-inch border.
  10. Top with an even layer of the zucchini and onion mixture.
  11. Sprinkle with salt and pepper to taste.
  12. Add the remaining provolone, all the mozzarella, Bel Paese, and Gorgonzola, followed by half of the Parmesan.
  13. Sprinkle with additional salt and pepper.
  14. Bake until the crust is golden, about 15 minutes.
  15. Scatter the toasted pine nuts evenly over the surface.
  16. Bake until the pine nuts and crust are browned, 3 to 5 minutes longer.
  17. Remove from oven and sprinkle with the remaining Parmesan and fresh parsley.
  18. Serve immediately.
