Directions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook ground beef, chopped onion, and minced garlic until beef is browned and onion is tender. Drain excess fat.
  3. In a blender, process the canned tomatoes with their liquid until smooth.
  4. Stir the blended tomatoes, sliced mushrooms, tomato paste, fennel seed, salt, oregano, basil, and pepper into the beef mixture. Simmer for 15 minutes, stirring occasionally.
  5. In a medium bowl, combine cottage cheese, Parmesan cheese, cheddar cheese, 1/2 cup of the mozzarella cheese, and eggs. Mix well.
  6. Spread 2 cups of the meat sauce in the bottom of an ungreased 13x9-inch baking dish.
  7. Arrange half of the cooked lasagna noodles over the sauce.
  8. Spread the cottage cheese mixture evenly over the noodles.
  9. Top with the remaining noodles and the rest of the meat sauce.
  10. Cover the dish with foil and bake for 45 minutes.
  11. Remove the foil and sprinkle the remaining mozzarella cheese over the top.
  12. Return to the oven and bake uncovered for 15 minutes, or until the cheese is melted and bubbly.
  13. Let stand for 10 minutes before slicing and serving.
