Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175°C) and grease a 6-cup muffin tin.
  2. In a bowl, sift together flour, baking powder, salt, and nutmeg.
  3. In a food processor fitted with the steel blade, pulse the cubed butter and 1/2 cup sugar until coarse crumbs form.
  4. Add the egg to the butter mixture and pulse until well combined.
  5. Alternately add the dry ingredients and milk to the processor, pulsing until the dough comes together. Ensure milk is the last ingredient added.
  6. Divide the dough evenly among the prepared muffin cups, filling each about 2/3 full.
  7. Bake for 20-25 minutes, or until golden brown and a toothpick inserted comes out clean.
  8. While baking, mix the remaining 1/2 cup sugar and cinnamon in a shallow dish.
  9. Remove puffs from the oven and let cool in the tin for 5 minutes.
  10. Remove puffs from the tin and immediately roll them in the melted butter.
  11. Roll the butter-coated puffs in the cinnamon-sugar mixture until fully coated.
  12. Serve warm.

Note

Do not roll the puffs in the butter and sugar mixture if you do not plan to serve them immediately. The coating can make the puffs hard and crusty upon reheating.

For storage, freeze or refrigerate the plain puffs. When ready to serve, reheat them gently, then roll in the melted butter and cinnamon-sugar mixture just before eating.

If you do not have a food processor, you can cut the butter into the sugar using a pastry blender or two forks until crumbly, then mix in the egg and other ingredients by hand.
