Simple to assemble yet sophisticated in taste, this recipe brings restaurant-quality flavor to your home kitchen without requiring complex techniques.

Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. Wrap each piece of skinned chicken with bacon strips and secure with toothpicks.
  3. In a large oven-safe skillet, heat olive oil over medium heat.
  4. Add whole garlic cloves to the oil and warm gently until fragrant, ensuring they do not brown.
  5. Remove the garlic cloves from the pan and set aside.
  6. Season the bacon-wrapped chicken with salt and pepper.
  7. Sear the chicken in the same skillet until golden brown on all sides.
  8. Stir in the sliced onions and two of the reserved garlic cloves.
  9. Cover the skillet and transfer to the oven. Bake for 1 hour.
  10. While the chicken bakes, prepare the sauce: In a small saucepan, gently heat garlic puree in 1/3 cup olive oil over low heat.
  11. Add the liquor (wine) to the garlic puree mixture.
  12. Crumble the Roquefort cheese into the saucepan and stir until melted and smooth.
  13. Skim excess fat from the pan juices of the baked chicken and bacon.
  14. Strain the pan juices and add them to the cheese sauce.
  15. Stir the sauce well and reheat gently without boiling.
  16. Serve the baked chicken warm, topped with the Roquefort garlic sauce.

Note

Ensure chicken is cooked through before serving. Internal temperature should reach 165F (74C).

If using sour cream instead of cream for the sauce, add it at the very end and do not boil to prevent curdling.

"Liquor" in this context typically refers to a dry white wine or sherry. Adjust amount to taste.

For milder flavor, substitute Roquefort with Gorgonzola or Blue Cheese.
