Description

This elegant yet simple French-style baked chicken delivers deep, savory flavors with every bite. The chicken is seasoned with aromatic thyme and fresh herbs, then roasted slowly to ensure juicy meat and crispy skin. As it cooks, it mingles with sweet pearl onions, earthy mushrooms, and tender potatoes, all infused with a splash of dry sherry. The result is a comforting, one-pot meal that feels special enough for guests but easy enough for a weeknight. Serve with the pan juices spooned over the top for an authentic, restaurant-quality experience at home.

Ingredients

Directions

  1. Preheat oven to 375F (190C).
  2. Pat the chicken dry with paper towels. Sprinkle 1 teaspoon of salt, the MSG, and dried thyme inside the chicken cavity.
  3. Stuff the cavity with the parsley sprigs, 2 stalks of celery, and the yellow onion.
  4. Tie the chicken legs together with kitchen twine, and secure the wings to the body to ensure even cooking.
  5. Place the chicken in a large heavy casserole dish with a lid. Dot the top of the chicken with the butter.
  6. Cover the dish and bake for 30 minutes.
  7. Add the peeled white onions and dry sherry around the chicken. If using mushrooms, add them now. Sprinkle with the remaining 1 teaspoon of salt.
  8. Cover and bake for another 15 minutes.
  9. Add the pared potatoes around the chicken. Cover and bake for 15 minutes, or until potatoes are beginning to soften.
  10. Remove the lid. Bake uncovered for 30 minutes to 1 hour, basting frequently with the pan juices, until the chicken is golden brown and internal temperature reaches 165F (74C).
  11. Remove from oven. Let rest for 10 minutes before serving.
  12. Strain the pan juices and whisk to create a thin gravy. Garnish with chopped fresh parsley before serving.

Note

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven to maintain texture.

If you prefer not to use MSG, you can increase the salt slightly or add a dash of chicken bouillon powder for depth of flavor.

For a richer flavor, replace the dry sherry with white wine or chicken broth. You can also add carrots or turnips along with the potatoes.

For extra crispy skin, brush the chicken with a little olive oil before the final uncovered baking stage.
